George Crave of Crave Brothers Farmstead Cheese is proud of the new additionto the company’s cheese label.

The Waterloo, Wisconsin, company is sporting a circulargreen stamp with the words “produced with renewable energy” and has been promotingthe label to consumers ahead of this month’s celebration of Earth Day on April 22.
“We take all the waste from the cows and we run it through two largefermentation tanks,” George says. “We ferment off the methane gas thatpowers an internal combustion engine that produces enough electricityto power the farm, the cheese factory and an additional 300 homes inour community.”
Crave Brothers has been dairying for over 30 years and manufacturingcheese for the last 10 years. They have a little more than 2,200 headof dairy cattle and make four main styles of cheese.
“We use about 70 percent of our milk from the dairy farm for the cheesefactory,” George says, “so we use a lot of milk producing products thatgo coast to coast.” PD
