The kids are out of school, and that makes everyone at my house a little giddy. Summers on the farm are crazy busy, but it’s a fun kind of busy. I love having the kids popping in and out of the house. I love having them home for meals and to help out at the house.

The problem is that they are getting super responsible and helpful on the farm, so I never get to have them help me. If I want to see them, I have to lure them to the front porch with a refreshing snack or deliver treats to them while they work.

Hot summer days call for popsicles, and what’s better than the classic chocolate and peanut butter combo? These popsicles are a cinch to throw together, are super healthy thanks to Greek yogurt, and make an easy grab-and-go snack. In fact, these are so versatile they show up as a snack, breakfast or dessert at my house. Take a few minutes and get a batch of these in the freezer. Then enjoy sitting on the front porch with your family!

Chocolate and peanut butter Greek yogurt popsicles

  • 1 cup Greek yogurt
  • ¼ cup chocolate chips (semisweet or milk chocolate)
  • ¼ cup peanut butter chips
  • ¼ cup sugar (optional, I skip it)

Place chocolate chips in a 1-cup, microwave-safe bowl. Melt chips in the microwave at half power for two minutes, or until melted, stirring after each 30 seconds. Add one-half cup Greek yogurt to melted chocolate chips. Add one-eighth cup sugar if desired. Place mixture in a Ziploc bag and snip about one-half inch of the corner off.

Repeat the same process with the peanut butter chips.

Pipe alternating layers of chocolate Greek yogurt mixture and peanut butter Greek yogurt mixture in the popsicle molds. Tap on the counter top a few times to help get the air bubbles out of the popsicles.

Cover the popsicles with lids and freeze for four to six hours or until firm.  PD
